You can either purchase pearls, syrups, teas and other required ingredients to prepare your own bubble tea at home or you can use what you have at home to create your own boba! It’s up to you!

Here are some do it yourself recipes to start your bubble tea journey!

Tapioca Pearls

TAPIOCA PEARLS

Ingredients:

  • 100 g tapioca starch 

  • 50 g brown sugar 

  • 80 ml water

Preparation:

  1. Boil 60ml of water and add 30g of brown sugar.

  2. Once it is well incorporated and bubbling, turn the heat off. Add half of the tapioca starch and mix well. You can add food coloring at this step to have fun!

  3. While the mixture is still hot, slowly add the rest of the starch flour in increments and mix well again. A slightly sticky dough should form. Allow the mixture to slightly cool before proceeding to the next step.

  4. On a flat surface, knead the dough. Sprinkle some of the flour and roll out the mixture to about 1-1.5cm thick.

  5. Using a knife, cut these into 1.5cm by 1.5cm squares.

  6. Roll these in your hand into small ball shapes. Cover in some dry tapioca starch to avoid the balls from sticking to each other.

Cooking:

  1. Boil 8 cups of water and add the dry tapioca pearls. Allow this to cook on for 6-8 minutes on medium-high heat.

  2. Turn to low heat and allow this to cook for another 5-10 minutes. Remove the tapioca pearls from the boiling water once these begin to float to the surface.

  3. In another pot, boil 20ml of water and 20g of brown sugar for 5 minutes and reduce to a syrup.

  4. Add the boba immediately to an ice bath for 1 minute.

  5. Put the tapioca pearls into the prepared brown sugar syrup on low heat. Allow this to steep for at least 6-8 minutes or until the syrup thickens to a desired consistency. Stir occasionally. This can be immediately added to hot drinks. For cold drinks, allow the mixture to rest for 10-15 minutes before assembling.

Tips:

Altering the cooking time will change the firmness of the boba pearls. 

  • Firm: 6 - 8 minutes 

  • Chewy: 8 - 10 minutes 

  • Soft: 10 -15 minutes 

  • Very Soft: 20 - 30 minutes

The shelf life of cooked pearls is 4 hours at room temperature. Pearls kept in the fridge can last up to three days. They won't keep their original texture, though. Although boba can be frozen, we don't suggest it because the boba won't be soft and chewy. It is best to just prepare what you intend to utilize.

Raw pearls, on the other hand, have a much longer shelf life. If properly preserved, dried pearls wrapped in starch can keep for two to three months. Store away from direct sunlight in a cool, dry area. It can be stored for a longer period of time if you use an airtight container.

Why stick to brown sugar? There are many different flavors you can try to incorporate when making tapioca pearls.

Popping Pearls

POPPING PEARLS

Ingredients:

  • 150 g fruit juice of choice

  • 5 g sodium alginate 

  • 50 g drinking water 

  • 6 g calcium lactate 

  • 1 liter distilled water 

  • 2 cups clean water for rinsing

Preparation:

  1. Dissolve calcium lactate in distilled water. Let sit for 4 hours, or overnight. Strain after this time.

  2. Mix drinking water with sodium alginate. Stir until thickened and smooth. Then mix into fruit juice, add food colouring (optional) and stir until smooth.

  3. Store the juice in the fridge for up to 2 hours. Prepare a bowl of 2 cups of clean drinking water to rinse the pearls after preparation. Using a dropper or a syringe, drop the juice mixture drop by drop into the calcium lactate solution. Let it sit for ten minutes.

     4. Then rinse the pearls repeatedly in the clean drinking water and they are ready to use.

     5. Serve your popping boba as bubble tea topping or with a chill dessert!

JELLY CUBES

Ingredients:

¼ cup cold water 

2 tbsps coconut chunks 

â…” cup preferred juice 

1 tablespoon honey

Preparation:

  1. Pour a one-quarter cup of cold water into a small mixing bowl 

  2. Add two tablespoons of coconut meat to the mixing bowl and let it soften for 30-60 seconds 

  3. Whisk three tablespoons of honey and two-thirds cups of your preferred juice into the cup with the water and coconut 

  4. Put your jelly mix into a refrigerator-safe container and chill for at least an hour 

  5. Remove the refrigerated pan and cut the hardened jelly into one-quarter-inch cubes 

  6. Place the cubes in the bottom one-quarter of a serving glass and pour your tea over the top of the cubes 

  7. Serve and enjoy your rainbow jelly boba!

Jelly Cubes

In order to make your own bubble tea, apart from pearls, you will need a few basic ingredients. However, your ingredients might change according to what type of Boba you want to prepare.

Here are some recipes of commonly preferred bubble teas!

Brown Sugar Milk Tea

BROWN SUGAR MILK TEA

Ingredients:

  • 8 bags of black tea or 3 tablespoons loose-leaf black tea

  • 4 cups hot water

  • 3/4 cup quick-cooking tapioca pearls

  • Whole milk to serve, or your choice of milk

  • Simple syrup to serve, or your choice of sweetener

For the Simple Syrup:

  • 1/2 cup water

  • 1/2 cup sugar

Preparations:

  1. Prepare the tea: Steep the tea bags or leaves with 4 cups of freshly boiled water. Let the tea sit in water until it cools completely. (See note 2)

  2. Prepare the simple syrup (if using): Add the water and sugar to a saucepan and quickly stir everything together. Heat the water on medium-high and cook until the water boils and the sugar completely dissolves. Remove the saucepan from heat and let the simple syrup cool before transferring to a jar.

  3. Cook the tapioca pearls: Bring about 4 cups of water to boil and add the tapioca pearls. Stir the pearls and wait for them to float to the top. Then, cook them for another 5 minutes. Test a pearl to see if it has reached the desired level of softness. Cook the pearls for another few minutes if they are still stiff. Use a slotted spoon to remove the pearls from the hot water. Quickly rinse the pearls with water. Transfer the pearls into a bowl, and mix the pearls with a few tablespoons of simple syrup (to taste).

  4. Assemble the drinks: Strain the tea into a pitcher. Divide the cooked tapioca pearls into 4 large glasses. Next, add a few ice cubes to each glass. Pour 1 cup of the tea into each glass. Add 1 1/2 tablespoons of milk and 1 1/2 tablespoons of simple syrup into each glass. Stir and taste the milk tea. Add more milk or simple syrup to your taste.

  5. If you are serving the beverage to guests, have a small pitcher of milk and the jar of simple syrup ready so that each guest can adjust their drinks to their taste. The drink is usually served with large boba straws (large enough for the tapioca pearls to go through). If you don’t have the straws on hand, you can use spoons to scoop out the tapioca pearls.

Strawberry Bubble Tea

STRAWBERRY BUBBLE TEA

Ingredients:

  • 1/4 cup tapioca pearls

  • 2 green tea bags

  • 1/4 cup strawberry syrup

  • 2/3 cup water

  • 1 cup ice

  • 2 2/3 cup water

Preparation:

  1. Cook the tapioca pearls by adding 2 cups of water. Simply take your tap water, boil it, and cook until soft. Check the package directions for exact times. Drain tapioca balls and set them aside.

  2. Next, in a small pot, boil 2/3 cup of water and pour hot water into a mug. Add in your green tea bag. Stir until desired strength. Remove the bag and set aside to cool.

  3. Put the tapioca balls into a cup and add the strawberry syrup. Then add the milk, green tea, and ice.

  4. Stir and enjoy!

Milk Tea With Coffee Jelly

MILK TEA WITH COFFEE JELLY

Ingredients:

Coffee Jelly

  • 1 packet gelatin (2 1/4 teaspoons)

  • 1 1/2 tablespoons water

  • 2 heaping tablespoons (35g) granulated sugar

  • 1 cup very hot strong coffee

Milk Tea

  • 3 cups hot water

  • 3 bags black tea

  • 2 tablespoons (25g) granulated sugar (adjust to taste)

  • 2 tablespoons heavy cream or milk

Preparation:

  1. In a medium bowl, stir together gelatin and water. Allow gelatin to bloom for 3 to 5 minutes before stirring in sugar and very hot coffee. Stir until sugar and gelatin are completely dissolved.

  2. Transfer mixture to a 7x5-inch dish. Refrigerate until solid, at least three hours.

  3. While your coffee jelly is firming up, add tea bags to hot water and brew very strong black tea. Allow to cool slightly before placing in the refrigerator to chill.

  4. Once jelly is firm and tea cold, stir together tea, sugar, and cream. Add more sugar and cream to taste. Cut jello into 1/2-inch cubes (slightly smaller if serving with a straw), and add to your glass until the glass is about 1/3 of the way full. Pour in milk tea.

  5. Serve with a spoon (or a boba straw) and enjoy!
